Applesauce Cake Recipe

My favorite holiday dessert! An old country style recipe passed down through my mother’s family

A recipe dear to my heart! It was passed down through my mother’s family and was a staple dessert at our winter holiday meals. I have downed many, many servings of this cake going back to my childhood.

Sweet, dense, rich and warm with ‘fall’ spices, the aroma of it baking is almost as good as eating it. It’s easy to make and addicting to eat!

INGREDIENTS

1 1/2 C unsweetened apple sauce

1/2 C margarine or butter

2 C sugar

1 egg, beaten

2 1/2 C Flour

1/2 C soda water - make by combining 2 tsp baking soda, 1/2 C boiling water

1 1/2 C raisins

1 1/2 C walnuts

1/4 tsp salt

1 tsp cinnamon

1 tsp cloves 

1 tsp nutmeg

1/2 tsp allspice

DIRECTIONS

·      Preheat oven to 350

·      Cream margarine or butter and sugar. Add beaten egg and applesauce.  

·      Make the soda water mixture.

·      Gradually add the flour and soda water to the applesauce mixture - alternate adding a portion of flour, then soda water - to the creamed mixture.

·      Mix in all four spices and salt. 

·      Flour the raisins and walnuts by mixing them with 1/4 C of flour. Fold floured raisins and walnuts to the batter, mixing until they are just moistened. 

·      Grease and flour a tube pan or two 9" baking pans. Pour batter into pan(s).  

·      Bake 50 -60 mins in the tube pan or 55 - 65 mins in 9" baking pans.  A cake tester inserted into the center should come out clean when done.

·      Allow to cool in pan for 1 hour before removing. 

·      Let stand all day or overnight for best flavor
